It’s early august, which can only mean one thing: Peach season is upon us! This is the time of year when nature gifts us with a bountiful harvest of sweet and luscious peaches. Bursting with flavour and a vibrant colour, this fruit is a true embodiment of summer.

Peaches are hands down my favourite fruit. So, you can imagine my excitement when I begin to see the market shelves brimming full with these most delicious locally grown gems. I can never resist the urge to scoop up a basket.

This fruit is so versatile, and there are a million different routes I could take with this blog. But today, I’m going to whip up a peach compote and use it to explore some bake free dessert options. Because who wants to crank up the oven in this blistering heat?! I know I sure don’t.
Making a peach compote is quite simple. In fact, it only requires 3 ingredients. Here are the specifics:

Peach Compote
  • 2 cups Peaches
  • 1/3 cup sugar
  • 2 tsp fresh lemon juice
    ***some great additions are vanilla extract, cinnamon, or bourbon

  1. Add all ingredients to small saucepan and bring to a boil over medium heat. Stir constantly.
  2. Reduce heat and simmer for 10 minutes. Stir occasionally.
  3. Remove from heat and let cool.
This compote is incredible when served fresh but can absolutely be frozen. Freezing it is a great way to capture the delicious flavour of summer peaches to enjoy all year long. As far as the world of bake-free desserts goes, Peach Compote reigns supreme. Its velvety texture, rich colour, and irresistible flavor make it a delightful addition to any culinary creation.
 
 
Peaches are delicious on their own, they certainly don’t need to be trifled with…but trifle I shall do!

I have some store-bought sweet loaves that I am going to slice and cut into rounds for layering. I will be starting with that as my base, adding layers of vanilla pudding, compote and whipped cream. Repeat as much as necessary. And it’s that easy.

Next up is a classic Peach Shortcake. Again, you can make the cake bases from scratch if you’re feeling ambitious, or just pick some up from the grocery store. Trust me, once it’s topped with peach compote, fresh peaches, and whipped cream, no one will be able to tell if it’s made from scratch or not! This dessert is elegant and fool proof. A great option for a summer gathering.
