Tacos – A Versatile Meal for the Whole Family

Is it just me or is trying to find a healthy dinner that the whole family will gobble up a daunting daily task. Coming up with family meals three times a day, every day can get exhausting, amiright? Like many things in life, my dedication to meal prep ebbs and flows. Some weeks I set myself up for success and other times I just seem to be at a loss as to what to cook at all. So, I thought I’d share this major win! Fish tacos with mango coleslaw!

My hubby went fishing a couple weeks ago and caught a big haul of pickerel, which was the inspiration for this meal.

We love tacos and use to keep a taco night in our weekly rotation, that is, until both of the kids decided one day that they won’t eat taco seasoning anymore. The taste buds on these kids are ever changing (both mentally & physically).  What they love one day, is the pits the next. But finding a way to serve tacos is a great family option because it is so customizable. The kids love the freedom of making their own plateful. And we all have fun debating who’s is tastiest!

The best thing about tacos though, make a big batch, and like magic, your meal prep for the week is well underway! Peppers are sliced, lettuce and tomatoes and chopped, and this mama’s life just got much simpler! The remainder of my weekly meals revolve around using what’s leftover. Perhaps a stir fry or salad with chicken the next day. We like to use coleslaw in our tacos, which also pairs well with pulled pork, so there’s another meal the leftovers will accompany.

Let me go on about this coleslaw though because it was definitely the star of the show. Since we were having fish tacos, and the fish is very mild, I decided to add a punch of flavour with mango coleslaw, and let me tell you, it did not disappoint! This slaw combines crisp vegetables with sweet mango in a tangy dressing, everything your taste bud’s desire. Not to mention that it looks like a masterpiece in a bowl, with its bright purple, yellow and orange shavings. This is a favourite in our house for sure, and I’ll share just how easy it is to make!

There are so many variations of coleslaw out there, but you know me, I like to keep things simple. This salad comes together in minutes with the help of The Garlic Box’s Garlic & Mango Dressing. This is one of my all-time favourite dressings, and it is perfect for this slaw.

Mango Coleslaw
  • 4 cups mixed cabbage of choice (I used red and green)
  • 1 cups shredded carrots
  • 1 diced mangos
  • 1 bunch diced green onion
  • ¾ cup The Garlic Box’s Garlic & Mango dressing
Mix all ingredients in a serving bowl and let sit for at least one hour before serving. This salad is best when made the day before serving.
This coleslaw was a fantastic addition to our meal and will serve us well in the days to follow as it keeps in the fridge without wilting. It’s great as a stand-alone meal topped with tofu or chicken, served as a side, or as a sandwich topper.
Another great reason to make tacos is that much of the ingredients are locally sourced. We serve our tacos with a selection of fillings such as pickled onions, tomatoes, lettuce, avocado, and coleslaw. But the options really are endless. I grabbed mostly all of the produce from Anna’s, the fish was caught right here in Lake Erie, and I bought homemade corn tortillas from Kingsville’s El Diablo restaurant. Supporting local businesses is so important, now more than ever when the convenience of online shopping has seemingly made the world a smaller place. Knowing that where we’re spending our money is impacting people in our community is so important to our family.
