Spring Quiche: Featuring Essex County Grown Goodies
As the temperature slowly climbs each week, our gardens are growing greener! Along with warm weather, we gain beautiful blooms, joyful sunny skies, and fresh garden goodies. Eating seasonal vegetables is one of our favourite parts of Spring, as we can finally purchase produce from local farmer’s stands and pick fresh tomatoes and herbs from our very own garden, instead of choosing produce from the grocery store. Having a genuine connection with the food you eat helps fuel your body and makes each meal more special.
Here at Anna’s, we have a table full of fresh, local foods including vegetables, fruits, herbs, and drinks! Great things happen when you choose local… you’re supporting your local economy, and you’re feeding your families with the freshest foods available to you. Local produce isn’t travelling thousands of miles, being shipped across the country to get to you. Often times when you shop local, the food was harvested within the past few days!
You can make so many delicious meals with the goodness of Essex County, so we wanted to share an easy recipe we’ve been indulging in lately, Vegetable Spring Quiche!
4 Stocks of Asparagus
¼ Red Pepper
1 Green Onion
¼ White Onion
¼ Cup of Almond Milk (you can use regular milk if preferred)
1 Pie Shell
A Handful of Fresh Chives
Dash of Salt, Pepper, and Garlic Box’s Garlic Salt
Desired Amount of Cheese
You can add any additional favourites if you choose, including more veggies, bacon, ham etc.
How To Make:
Prepare your pie shell per package instructions. Some brands require you to pre-bake the pie shell. Each brand has its own unique preparation.
Next, I prepared my veggies by washing them. Be sure to wash thoroughly because if you have purchased your produce locally, often times there are remaining specks of soil on the vegetables… how fresh is that! After everything was washed and dried, I mixed the eggs, the milk and the spices in a medium bowl. I chopped all my veggies into bite-sized pieces and pan fried them in butter. The green onion, spinach and the chives are the only items I added in fresh. After all the veggies were fried, I mixed them, and the fresh items, into the bowl with the eggs. Add your desired amount of cheese, I used about 1/8 of a large brick of herb & garlic cheese.
Once everything was stirred, I poured the mixture into the prepared pie shell and carefully placed in the oven. Put into the oven at 375° F/ 177° C or 35 – 45 minutes. Bake until there are no liquidly parts of your Quiche, you can check for this by sticking a toothpick in the centre.
Garnish with fresh chives and chive florets, more cheese, and a sprinkle of Dill if desired! Let cool and enjoy!
