Signs of spring are in the air, and in the trees! As the season sweeps its way across our awakening deciduous forest, you may notice buckets hanging from the maple trees collecting the sweet, delectable sap.

In our house, we really strive to cook seasonally as best we can. We are so fortunate in this great pocket of the earth to have access to an abundance of locally grown greenhouse produce. But it’s nice to also recognize what’s in season naturally, and support what is native to our location. And right now, that is maple syrup!
Maple syrup is such a versatile condiment. It can be used in food preparation and it’s a great natural sugar substitute.
A simple Google search will give you a hundred ways to use maple syrup aside from the classic topping on a stack of flapjacks, although, that is this households most frequent use for it!
Flourish Protein Pancake/waffle mix $12.99 | Spout ceramic mixing bowl $19.99 (plus 30% off) | Voisin’s Canadian Maple Syrup ( 1 L) $24.99 | Platter $39.99
And before we get off the topic of pancakes, can I tell you how absolutely incredible this maple cinnamon butter was on mine this morning. Seriously, unbelievably decadent. It will definitely be the star of this weekends brunch! Imagine this with French toast and bananas….I’m already salivating.

Here are a couple more of my favourite ways to use maple syrup:
MAPLE LATTE
Years ago, I worked as a barista, and a customer introduced me to adding maple syrup in my coffee in place of sugar. I don’t normally like to tamper with my morning cuppa, however, I do like to splurge on the weekends and whip up a maple latté.
Blanc Organic Amber Maple Syrup $14.99
Begin by pouring your desired amount of espresso or coffee (I opt for a third of a mug of espresso) add in about 1/2 oz of maple syrup, pour in warm milk & top with froth and viola! A delicious way to treat yourself.
