Spinach prefers cool weather. Warm temperatures, erratic moisture, or dry conditions can induce bolting or poor leaf quality. Sow seeds in cool soil (20-24C) rich and low acidity . Keep evenly moist and fertilize with nitrogen rich organics such as blood meal. Direct sow 0.5 inch deep in rows of about 1 foot apart. Thin to 1 inch for baby leaf production or 3 inches for mature leaf production. Harvest individual leaves or cut the whole plant when ready.
